Pecorino and Chianti Sausage

Our product was created many decades ago and has been a treasured family recipe that creates entertainment for all.
On a family farm, children would use scraps of meat to create unique flavour blends of sausages with the aid of Nonnas and parents for a truly Italian classic dinner. The most favourable dish still made today is the Pecorino and Chianti sausage.
This partnership of ingredients creates the ultimate Italian experience. The Chianti ‘s high acid content and coarse tannin means it can cut through richer fatty dishes to create a distinguishing, tart, zesty and herbaceous sausage. In comparison, the cheese adds a creamy salty texture making it the perfect addition to such a spiced sausage.
GCL has honoured this traditional recipe and is proud to be using UK meat for our customer base.

Basilicata Sausage

Convenience and price is still key but consumers want to know exactly where recipes have originally been sourced and what regional tastes they are experiencing.
Basilicata was historically one of Italy’s poorest regions with a low population due to it’s high, craggy mountains and intractable soil creating agriculture to be a difficult occupation. Many locals have emigrated from the region but a rural, peasant diet is still ingrained meaning that the traditional Basilicata sausage has started to gain recognition.
The Basilicata sausage is made only using top quality meat, seasoned with salt, fennel, paprika and chilli powder.
