Winter Food Trends 2022

Looking ahead to 2022, our dedicated marketing and NPD teams have been researching market-trends and consumer behaviour. We’ve been out visiting foodie events and the latest up and coming restaurants. The following document also includes suggested products and flavour profiles for winter 2022.

Food trends can be dictated by popular culture, social media, and global events. Some food trends may be short term, and some may become long lasting and at times a permanent fixture in food culture.

It’s worth noting that post pandemic we can see some trends and decisions being dictated by price, availability, and supply chain issues.

Italian x Asian Fusion

Over the last few months, we’ve seen more noise about Italian Asian fusion food. Initially it may sound strange but when you think about some of the key flavours such as garlic, tomato, soy, chilli, umami, and salt we see how the flavour pairings can work well together.

Nduja & Vegan Nduja

Due to its totally unique flavour and versatile texture, nduja is an ingredient that can be used in so many ways, for example as a paste, as a protein, a filling, or a topping.

Pasta Straws

Pasta straws are about to become your new favourite alternative. Unlike paper straws, pasta holds its strength for over an hour. The latest eco-friendly alternative which fits in with many companies’ sustainability ethos especially those serving Italian food!

Classic / Retro Flavour Profiles

Classic and retro flavours have appeared more often throughout the pandemic. Some brands have replaced the dining out experience with dine at home formats, centred heavily around comforting, nostalgic flavour profiles. Retro flavours take consumers down memory lane to reminisce on old times.

Truffle

The popularity of truffle is growing rapidly. Truffles are known for their rich, indulgent, and aromatic flavour. 10 years ago, truffle was a flavour of fine dining, a treat, whereas now we see it in the affordable luxury market and placed on most menus. The versatility of truffle allows it to be used in many ways.

Low / No alcohol drinks

The low- and no-alcohol drinks retail market is set for further growth fuelled by the alcohol moderation trend. The trend has grown as a result of the COVID-19 outbreak as health takes more of a centre stage in consumers food & drink choices. As consumers continue to adopt healthy habits, this will help the growth of sales in low/no alcoholic drinks.
